$8 dinner for a family of 6!

~Rosemary Roasted Chicken with Potatoes~


This is a busy, expensive time of year!  So I'm always on the lookout for inexpensive, easy meals!  McCormick has these new spice packs, and they are really good.  The recipe is right on the back of the box. And... they even tell you how much of each spice you will need, so if you save the recipe below and are well stocked on spices, you don't even have to buy the McCormick spice pack each time~saving you even more money!



Rosemary Roasted Chicken with Potatoes

2 tsp. paprika
1 1/2 tsp. crushed rosemary leaves
1 tsp. minced garlic
1/2 tsp. coarse ground black pepper

2 tbsp. olive oil
1 tsp. salt
6 bone-in chicken thighs, skin removed (about 2 lbs.)
1 1/2 lbs. small red potatoes, cut into 1 inch cubes

1. Mix oil, all of spices and salt in large bowl.  Add chicken and potatoes; toss to coat well.
Arrange chicken and potatoes in single layer in foil-lined 15x 10x 1 inch (I use 9x 13) baking
pan sprayed with no-stick cooking spray.

2. Roast in preheated 425 degree oven for 30 minutes or until chicken is cooked through and
potatoes are tender, turning potatoes occasionally.

This is what we are having for dinner tonight!~even my kids like it!

  2. Opps! Totally missed the chicken thighs, never mind my earlier question. This is great...my husband keeps asking for rosemary potatoes--thanks for posting!
