Good morning! Yesterday I made a batch of the tastiest yet healthy muffins. You can add fresh blueberries, raisins, or even chocolate chips! The recipe makes about 48 muffins. I make them all, and then freeze them. It is so nice to just pop a muffin into the microwave for about 10 seconds for a quick healthy breakfast or snack. I made Blueberry Bran muffins with fresh blueberries (and sprinkled in some chocolate chips) :) SO YUMMY!
Here's the recipe...
Ingredients
4 c. 100% all bran cereal
1/2 lb. raisins or blueberries (or less)
1/2 cup canola oil + 1/2 c. unsweetened applesauce
1 c. brown sugar
3/4 c. honey
4 beaten eggs
3 c. wheat flour
1 c. white flour
1 c. wheat germ
1 tsp cinnamon
1/2 tsp clove
1/2 tsp nutmeg
1/2 tsp salt
5 tsp soda
2 c. 100% bran flakes
1/2 tsp vanilla
1 quart buttermilk (or 4 c. milk + 4 tsp lemon juice)
chocolate chips (optional)
*Pour 2 c. boiling water over raisins and all brain cereal and mix. Add blueberries. Cool a bit, and then mix in oil, applesauce brown sugar, honey and eggs.
In separate bowl, mix the flours, wheat germ, cinnamon, spices, salt, and soda. Add to the above mixture.
Then mix the bran flakes, vanilla, buttermilk, and chocolate chips. (May need to mix by hand at this point).
Refrigerate for 8 hours. Bake muffins at 375 degrees or until toothpick comes out clean. Make all up at once and freeze, or keep in fridge for a few days, and make as needed. Makes about 48 muffins.
