My father in law was here this weekend, and mentioned that he had recently made cookies with butterfinger candy in them. So, while we were grocery shopping we picked some butterfingers up and I asked him to make them for us! I've never been a huge fan of butterfingers, but these cookies were so delicious. We found this five star recipe from taste of home here. (Great way to use leftover Halloween candy!)
Here is the recipe in all of its yummy goodness!
Butterfinger Cookies
1/2 c. softened butter
3/4 c. sugar
2/3 c. packed brown sugar
2 egg whites
1 1/4 cups chunky peanut butter (we used creamy)
1 1/2 tsp. vanilla
1 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
5 butterfinger candy bars (2.1 ounces each), chopped
In mixing bowl, cream butter and sugars. Add egg whites and beat well. Blend in peanut butter and vanilla. Combine flour, baking soda and salt, and add to creamed mixture. Mix well.
Stir in candy bars. Shape into 1/2" balls and place on greased cookie sheets.
Bake 350 degrees for 10-12 min. until golden brown.
Cool on wire racks and gobble up.
