~swiss oatmeal recipe~



Not only is this recipe healthy, I don't have to worry about what I will be eating for breakfast the next 3 days!  (a great "make ahead" recipe for busy mornings.) Steel-cut oats, are less processed and therefore retain more nutrients.  I found they were cheaper in the organic section of my grocery store compared with the regular cereal aisle.  I only use 1 Tablespoon of honey because I don't like it too sweet.  If you start with less honey, you can always add more if you need to.

Swiss Oatmeal

1 ½ cups water
¾ cup steel-cut oats
¾ cup fat free milk
1  six ounce carton plain yogurt
3 Tbsp. honey
¼ tsp. pumpkin pie spice
1/8 tsp. salt
½ cup assorted dried fruits
(cranberries, blueberries, apples etc.)
1/3 cup coarsely chopped almonds, toasted
Sliced banana (optional)

In 2 quart saucepan combine water and oats.  Bring to boiling; reduce heat.
Simmer, uncovered 8 minutes (oats will not be tender).  Remove from heat;
transfer to mixing bowl.  Cool 5 minutes.  Stir in milk, yogurt, 2 Tbsp. honey,
apple pie spice, salt and dried fruits.  Cover; chill 12 hours or up to 3 days.

2. Serve at room temperature or heat in saucepan over low heat for 10 minutes
and stir in remaining 1 Tbsp. honey.  Top with almonds and sliced banana.
