Recently I found this recipe for Caesar Salad Bites in a Southern Living Magazine and thought it looked like a fun alternative to serving salad traditionally. It's kind of like a salad taco!~my kids might even like it! It looks simple and yummy, and I like that it has fresh parsley in it.
Caesar Salad Bites
Makes 8 servings
2 romaine lettuce hearts
2/3 cup refrigerated creamy Caesar Dressing
1/2 English cucumber, chopped
1 1/4 c. small croutons
1 cup halved grape tomatoes
1/4 cup chopped fresh parsley
Separate romaine hearts into 24 medium leaves, and arrange on a large platter. Spoon dressing lightly down center of each leaf. Top with chopped cucumber and next three ingredients. Sprinkle with pepper to taste.
Now, if you are feeling a little bit more adventurous, you might want to try this recipe for P.F. Chang's famous chicken lettuce wraps from food.com. It's been a while since I've been to P.F. Chang's to have the real thing. This recipe got great reviews, so I think I might have to give it a try!
