Chocolate Chip Pumpkin Muffins…best ever.
We love these at our house! We love them so much, that I put the dry ingredients for multiple batches in quart size ziploc bags. Then whenever we want to make them, I dump the contents of the bag in the bowl, and just add the eggs, oil, water, pumpkin, and vanilla. An inexpensive snack with no preservatives!! I also use an ice cream scoop to put the batter in the muffin liners. (the scoops with the "trigger" work well!) Here is the recipe...
Chocolate Chip Pumpkin Muffins
(Makes about 30 muffins...2 dozen plus 6 more)
3 1/3 c. flour
2 tsp. baking soda
2 1/4 c. sugar
1 tsp. salt
1 tsp. cinnamon
2 c. canned pumpkin
4 eggs
1 c. oil (may substitute 1 cup applesauce instead, or do half oil plus half applesauce)
2/3 c. water
1 tsp. vanilla
1 c. chocolate chips
Mix together first 5 ingredients. Make a well and add liquid ingredients. Mix in chocolate chips. Spoon into muffin tins. Bake at 350 degrees for 15 minutes, then watch them disappear!
